Welcome to the Clement Knives Sharpening School.
I've set this up because chefs deserve better information about sharpening their tools, and using whetstones is an obtainable skill.
The school is open on Mondays and Tuesdays to working chefs and will be held in classes of ones and twos. You'll be coming to my workshop in Brentford.
The school is completely free. Instead of paying me, I'm hoping people will pay it forward and teach others what they've learned.
All you'll have to do is bring 3 knives that you use daily and that don't require proper fixing or reprofiling. You'll learn: sharpening basics, knife care, what stones to buy and from where (supporting London businesses), and how knives are made.
